Red Bean Salted Egg Yolk Pastry 红豆咸蛋黄酥

We preserve our salted egg yolk by immersing the eggs in a house-made brine for several months. Once the eggs have fully absorbed the savory flavor, we carefully extract the yolks and bake them into our pastry cookies, paired with smooth red bean  paste.
